| Yield: Serves 10 -12 |

| Ingredients: |
| Quaker Oatmeal Muffin Mix - Use 14 # 10 scoops for a bundt pan |

| Soft butter or margarine |
30 mL or 2 Tbsp |
| Brown sugar |
375 mL or 1 1/2 cups |
| Chopped walnuts |
125 mL or 1/2 cup |
| Coconut |
125 mL or 1/2 cup |
| Egg |

| Directions: |
Prepare Oatmeal muffin mix as usual, omitting 1/2 cup water and adding extra egg.
Pour into a well greased bundt pan, approximate depth one inch.
Bake in a 300 degree convection oven until just cooked (20 - 30 minutes).
Prepare topping by creaming margarine and brown sugar together. Add egg and milk blending well. Add coconut and nuts and stir well.
Pour topping over hot cake and return to oven for 10 minutes, until topping is browned.
Cool cake before serving.
