| Ingredients: |
| Goat Cheese |
120 g or 4 oz |
| Imperial/McCormick bay leaf |
1/2 |
| Imperial/McCormick thyme |
2 mL or 1/2 tsp |
| Imperial/McCormick rosemary |
2 mL or 1/2 tsp |
| Clove Sysco Natural garlic, diced |
1 clove |
| Imperial/McCormick ground black pepper |
to taste |
| Cognac |
60 mL or 4 Tbsp |
| Dry white wine |
125 mL or 1/2 cup |
| Extra virgin olive oil |
125 mL or 1/2 cup |
| Sysco Natural red onion, thinly sliced |

| Directions: |
Form the goat cheese into a log and slice into eight rounds.
Combine the onion, bay leaf, thyme, rosemary, garlic, pepper, cognac and wine in a saucepan and bring to a boil. Lower the heat to reduce the mixture to a syrup. Add olive oil and swirl to mix.
Pour the mixture over the goat cheese and serve at room temperature.
