Marinated Goat Cheese

Yield: Serves 4
 
Ingredients:
Goat Cheese  120 g or 4 oz 
Imperial/McCormick bay leaf  1/2 
Imperial/McCormick thyme  2 mL or 1/2 tsp 
Imperial/McCormick rosemary  2 mL or 1/2 tsp 
Clove Sysco Natural garlic, diced  1 clove 
Imperial/McCormick ground black pepper  to taste 
Cognac  60 mL or 4 Tbsp 
Dry white wine  125 mL or 1/2 cup 
Extra virgin olive oil  125 mL or 1/2 cup 
Sysco Natural red onion, thinly sliced  1/2 
 
Directions:
Form the goat cheese into a log and slice into eight rounds.

Combine the onion, bay leaf, thyme, rosemary, garlic, pepper, cognac and wine in a saucepan and bring to a boil. Lower the heat to reduce the mixture to a syrup. Add olive oil and swirl to mix.

Pour the mixture over the goat cheese and serve at room temperature.
