Tuscan Chicken Breast & Grilled Vegetable Medley

Ingredients:
Tuscan Chicken Breast   
Sysco Imperial/McCormick Italian Seasoning  60 mL or 4 Tbsp 
Sysco Imperial/McCormick Lemon and Pepper Seasoning  60 mL or 4 Tbsp 
Parmesan cheese, grated  30 mL or 2 Tbsp 
Olive oil  375 mL or 1 1/2 cups 
Skinless, boneless Chicken breasts (6 oz or 170 g)  24 
Lemon wedges  24 
Grilled Vegetable Medley   
Sysco Imperial McCormick Steak Seasoning  30 - 45 mL or 2 -3 Tbsp 
Olive oil  125 mL or 1/2 cup 
Assorted fresh vegetables, cut into chunks  2.7 kg or 6 lb 
 
Directions:
To Prepare Tuscan Chicken Breast:

Combine seasoning, cheese and olive oil to create marinade. Place chicken in a hotel pan and pour the marinade over it, turning to coat well. Refrigerate for at least two hours or up to overnight. Remove chicken from marinade; discard marinade. On preheated grill, grill chicken over medium heat until internal temperature reaches 165 degrees F (85 degrees C). Just before removing from grill, squeeze one lemon wedge over each chicken breast.

To Prepare Grilled Vegetable Medley:

Toss vegetable chunks with olive oil and seasoning. On preheated grill, grill vegetables on medium-high heat until tender-crisp.
