Spicy Caribbean Fried Chicken

Ingredients:
Sysco Classic boneless chicken breast halves   24 5 oz. 
Sysco Classic lemon juice   1-1/2 cups  
Sysco Imperial/McCormick garlic powder   1/3 cup  
Sysco Imperial/McCormick ground black pepper   1/3 cup  
Sysco Imperial/McCormick sweet paprika   2 tbsp.  
Sysco Imperial/McCormick salt   1-1/2 tbsp. 
Sysco Imperial/McCormick cayenne pepper   1 tbsp. 
Hot Sauce   1 cup 
soy sauce   1 cup  
Sysco Classic Canola vegetable oil,   For shallow frying  
 
Directions:
1. Arrange chicken on sheet pan in one layer. Sprinkle evenly with lemon juice; set aside 30 minutes.
2. Combine dry spices in shallow pan. Combine hot pepper and soy sauces in bowl. Place flour in separate shallow pan.
3. Dredge each chicken piece in seasoning mixture, shaking off excess. Dip into sauce mixture, then coat with flour.
4. For each serving, shallow-fry coated chicken in 325 degrees F oil, 10 minutes per side until cooked. Drain well.
