Home-Style Ham & Cheese Pockets

Ingredients:
Puff pastry squares   48 5-in 
Sysco Classicl ham, thinly sliced   3 lbs. 
Sysco Imperial Dijon-style mustard   3/4 cup  
Block & Barrel Imperial Swiss cheese, sliced   3 lbs.  
Sysco Classic eggs, large  
Tbsp. water   3  
 
Directions:
1. For each pocket, arrange 2 ounces ham on 1 puff pastry square, leaving 1/4-inch border all around. Spread ham with 1 teaspoon mustard; top with 2 ounces Swiss cheese. Brush border with water and top mixture with 1 puff pastry square, sealing edges together.
2. Mix eggs with 3 tablespoons water. Brush pastry pockets with egg wash; prick tops with fork. Bake on parchment-lined sheet pans at 400°F for 10-12 minutes until gold brown. Serve hot.
