Shrimp & Peach Skewers

Yield: Serves 8
 
Ingredients:
Sysco Imperial sliced peaches in light syrup  796 mL or 28 oz 
Mint or basil leaves, chopped  250 mL or 1 cup 
Small jalapeno peppers 
Lime juice   50 mL or 1/4 cup 
Fish sauce  30 mL or 2 Tbsp 
Large shrimp, cooked and peeled  30 
Salt and pepper, to taste   
Medium size skewers   
 
Directions:
1. Drain peaches in sieve set or bowl. Meanwhile, finly chop herbs and slice jalapenos in half and remove seeds if you don't like your food too spicy. Finely mince jalapenos. Place in a medium bowl along with basil, lime juice, fish sauce and pepper. Stir to combine.
2. Add well drained peaches and shrimp to herb mixture. Stir to coat. Let stand for 30 minutes.
3. Thread onto skewers and lightly sprinkle with salt. 4. Serve at room tempature with marinade spooned over the top or warm over medium grill basting with marinade.
